I roll my own sushi using a bamboo mat with the nori jacket around the rice and fish filling Maki-zushi. I am not skilled enough to make and roll sushi with the rice on the outside, this is where a LARGE mold like this really helps. rice on the outside Uramaki (Inside-out roll)is particularly important for making fried sushi, since only a starch sealed roll will survive frying intact and without getting soaked inside with oil. it's also useful for rolls you want to coat on the outside with yellow or black sesame, dry rice spices or masago roe.I do not recommend buying the small version of this product, as it's only useful in making small components for larger non-traditional decorative rolls, are hopefully unskilled with a rolling mat, or helping you form small rice logs to put your fish on top Nigiri-zushi, something most are able to do in their palm without a mold.JapanSuperMall the more expensive amazon add on vendor sent me the SMALL version model L-8582 bar code labeled in english as Large. amazon kindly refunded the purchase when i clearly photo documented this discrepancy for their review, but I wanted to warn others to avoid the same headache and delay in getting what you intended to get while here.M.V.
